Thyme Thymus vulgaris

Common thyme, gardenthyme

Family: Labiatae (Mint)

Description: Small shrubs with tiny, dark green leaves. Grows up to 1 foot (.3 m) tall. Bears many s mall pink to lilac flowers in midsummer. Attractive to bees. Distinctive flavor and scent.

Similar species: Creeping thyme (T. serpyllum) is a purple-flowered, low-growing ground cover. Lemon thyme (T. × citriodorus) is a small lemon-scented bush 6 to 8 inches (15 to 20 cm) tall.

Hardiness: Zones 4 to 9. In areas with cold winters, thyme should be covered with plenty of mulch for winter protection.

Best site: Poor, dry, well-drained, limey soil. Full sun to partial shade.

Propagation: Cuttings, division, or seeds will work.

Harvesting: Pick the leaves before the plants come into bloom in early summer.

Brewing: It seems as though the brewers of Mumm in the fifteenth century were willing to toss any herb with a strong smell into the brew kettle or fermenting barrel — thyme was no exception. Use ½ ounce (14 g) of fresh stems and leaves late in the boil to add a distinctive spicy taste and aroma. The same amount can also be added to the fermenter for a stronger scent.
